What’s For Dinner?: The Great Facebook Food Caper

Wow! Food discussions online get a lot of participation!  After posting a picture of my dinner on Facebook, I got all kinds of questions and snide comments about my meal.  Most everyone, however, wondered about exactly what they were looking at.  OK.  So here is the explanation:

The meat is Marlene’s world-famous blackened meatloaf (by blackened I mean only that I heated it too long in the microwave); the potatoes have spray butter on them (just a couple of short, quick sprays, no calories . . . ha!); the speckles in the potatoes are grains of Montreal steak seasoning (I used in on the meatloaf and thought a little bit on the potatoes would work, too); the green beans are . . . er . . . “green”; the salad contains lettuce, cucumbers, baby carrots, “cherub” tomatoes (you’ve seen the commercials on TV, no doubt), diced broccoli, diced celery, diced carrots (the last three prepared together if that makes any difference), and the mystery fruit, which is dried cranberries.  Oh, and I can’t forget the dolop—2 tablespoons for the uninitiated culinarist (like that’s a word)—of fat-free Catalina dressing.

So there you have it: 11-1/2 Weight Watchers’ points.  Enough fuel for a 40-minute bike ride into Spring Lake Village and back home again, with enough energy left over to write a long-winded treatise on what one had for dinner!
